Featuring long, straight black roots, Scorzonera is known for its distinct oyster-like taste. After harvesting, the roots release a white sap and should be thoroughly cleaned. This biennial plant blooms with edible yellow flowers during its second summer. While still young, the delicate leaves are perfect for salads, and the tops can be blanched similar to Belgian endive. It boasts excellent storage capabilities and can survive winter for a spring harvest, much like parsnips. A fantastic addition to enhance your selection of storage roots.
