The peppers feature a conical shape, with thick walls measuring approximately 3 1/2" by 2". They transition in color from pale yellow to orange and finally to red. Although typically picked when pale yellow, they can also be harvested at the orange or red stages. These versatile peppers are commonly used for stuffing, offering a spicier twist on traditional chile rellenos, and they are also delightful when fried or pickled. Santa Fe peppers are often referred to as Guero Chiles.
