Upon arrival, you will receive dormant root cuttings of horseradish. It is best to plant them without delay. If immediate planting isn't possible, take off any ties or bands from around the roots, then wrap them in slightly damp sphagnum moss or newspaper and refrigerate them. SAUCE PREPARATION: Begin by washing and peeling the roots. Grate the roots into a bowl either outdoors or in a well-ventilated area. Combine with white vinegar and salt (if desired) according to your taste preferences. Store the resulting sauce in a tightly sealed container within the refrigerator. TIP: After harvesting, consider replanting some of the collected roots for next year's yield. To maintain quality and prevent woody growth, it is advisable to divide and replant horseradish every two years at minimum.
