The round, black-skinned roots can be collected when they reach sizes of 2–4 inches, offering a crisp and spicy white interior. Ideal for planting from mid-spring (when soil temperatures are at least 60°F/16°C to avoid bolting) until the fall. It has a medium-long shelf life.
