Artichoke-flavored leaf stems.

When boiled, the midrib and leaf stems of cardoon offer a flavor reminiscent of artichoke (not suitable for raw consumption). These parts are frequently utilized as a side dish, an ingredient in stuffing, or added to soups and stews. It is necessary to blanch cardoon prior to consumption. To achieve this, firmly tie the stalks together and wrap them in black plastic or black-and-white newspaper. If left unpicked, these plants can grow up to 3-4 feet tall and will bloom with large purple flowers that resemble thistles. The strikingly lobed and serrated leaves display a silver-green hue that makes them a distinctive element in floral arrangements. Spines have been significantly reduced. This plant is perennial in Zones 6–10.
